The original recipe
Goat's milk, salep and mountain herbs — churned and pounded the traditional way, not shortcut with stabilisers. What you taste in Abu Dhabi is what is served in Maraş.
Three hundred years of one recipe, more than three hundred stores around the world, and a table in Abu Dhabi set the same way it is set in Turkey.

A unique flavour enjoyed all over the world, with a history of 300 years.
It starts in Kahramanmaraş, in south-eastern Turkey, where the milk of goats grazing on wild mountain herbs meets salep — the root of an orchid that grows in the same hills. Together they give Maraş ice cream its density and its famous stretch, thick enough to be cut with a knife and eaten with a fork.
The Kanbur family turned that local craft into a house, and the house into MADO. Over the last few decades the chain has grown past 300 franchised stores in Turkey and around the world, without changing the way the ice cream is churned and pounded.
MADO shops are more than ice cream parlours. Alongside the traditional tastes of Turkish cuisine, we serve our own signature flavours — ice-cream cakes, profiteroles, baklava, sarma, walnut muska and dolama.

“There are no divisions in my kitchen or my restaurant. We always say we want people to feel that they are valued.” Every guest is hosted the same way, from a single scoop to a full banquet.
Bread from our own ovens, desserts finished each morning, grills fired to order. Nothing sits waiting — which is why the menu changes with what is best that day.
Six locations across Abu Dhabi and Al Ain, open from breakfast until late.
